People like to ask me why I decided to become a chocolatier. After retiring early from MCI in 1998, I explored different hobbies. I earned my private pilot license, I practiced my golf swing, I collected art, I traveled. Then I began to ask myself how I could challenge myself on a greater scope. I enjoy fine cuisine, and love very, very good chocolate. For years, I had made chocolate truffles as holiday gifts. I began to study artisanal chocolate. I learned that its properties are sophisticated and complex, like fine wines. I had found my passion, and founded Celestial Sweeties, now known as Chocolat Céleste.
