1) The Maharaja of Travancore ordered a grand dinner in his palace and entered the kitchen before the feast to survey the dishes.
2) He saw a basket of vegetable scraps and told the cook not to waste them, but to find a way to use them.
3) The cook had an idea to wash, cut, cook, and season the scraps with coconut, chillies, garlic and curd to create a new dish called avial, which became famous in Kerala and is now a traditional part of feasts there.
