Pipeline variables in Azure Data Factory allow values to be set and modified during a pipeline run using a Set Variable activity. Unlike pipeline parameters which are defined at the pipeline level and cannot change, variables can be set and altered within a pipeline. Variables are scoped at the pipeline level and allow modification of values as the pipeline executes.
