New Dairy, Ithaca, NY – New teaching dairy. Involved from conceptual design through start-up and commissioning. This dairy design was unique in that the University wanted to provide a cross section of what students were likely to see in operating dairies after they graduated. The design included a wide degree of automation from manual swing connections to mix-proof valving. Products include fluid milk, cider, orange juice, ice cream, yogurt, and pudding. Processing included both conventional HTST pasteurization with extended hold capability and also vat pasteurization.
