Karthigai Deepam is a Hindu festival celebrated in Tamil Nadu to honor the birth of Lord Muruga and mark the victory of light over darkness. - 4. Payasam is a very traditional Indian recipe, and nearly no festival or special occasion is celebrated without vada and payasam. The dish itself is made by adding rice, vermicelli, flattened rice or lentils in milk and sugar and condensing it over a low flame. Please explain the question or problem that you investigated
- 5. When the desired consistency is achieved, the dish is garnished with cardamom, nuts like pistachios, cashews, almonds and raisins fried in ghee (clarified butter). - 7. The second dish that is made almost on all special occasions and festivals is Vada. In fact, in almost all south Indian eateries, vada is made for breakfast.
- 8. There are two types of vada. One is Ulundu vada, which is a made by frying fine black or white lentil dough with black peppercorns in oil. This vada will be fried in the shape of a doughnut.

- 14. Traditionally, this dish is made during Diwali. But in most households, this dish is also made during Karthigai Deepam. This is a very simple recipe with minimal ingredients, but the consistency is a tough one to nail.
- 15. It is made by adding rice flour to dark brown sugar and adding a little cardamom for flavor. The dough itself is shaped into balls and then flattened and fried in oil. The downside to this dish is that it tends to absorb a lot of oil and therefore pressing the adhirasam and draining the oil is necessary before consuming it.

- 17. This is another traditional recipe that is mostly made during Diwali and in most households, during Karthigai Deepam, too. This recipe looks like a dumpling, but is deep fried in oil.
- 18. The filling is made by melting dark brown sugar and adding grated coconut, boiled and mashed lentils, and cardamom. This is then shaped into small balls, dipped into the batter (all-purpose flour dissolved in water), and fried in oil.
