DR. KAREN M. ENSLE is a Family and Community Health Sciences (FCHS) Educator/Department Head for Rutgers Cooperative Extension of Union County. She is a Registered Dietitian, Fellow of the American Dietetic Association and certified in Family and Consumer Sciences. She develops and teaches Extension programs and is the Project Investigator for a $ 450,000 Supplemental Nutrition Assistance Program (SNAP-ED) grant along with oversight of 25 Union County Senior Meals Program sites. She is a member of the Board of Trustees, Community Access Unlimited, Eastern Union County YMCA Board. She received 2009 County Faculty Award from Rutgers administration.
