This document provides recipes for two non-turkey options for Thanksgiving: Rouladen, a traditional German stew made with thin sliced beef rolled with bacon and onions; and Glazed Cornish Game Hen, small game birds stuffed with a wild rice stuffing and baked with a current sauce glaze. Rouladen
This traditional German
dish is a delightful stew
that can make a great
center piece to a
thanksgiving meal. It has
meaty textures, a smooth
natural broth and fits right
in with other thanksgiving
favorites.
3 pounds thin sliced
sirloin
(Flank or round)
8 cups beef bouillon
1 pound bacon
1 medium onion (sliced thin)
Pepper
Tabasco
1. Remove any excess fat from meat; pound with tenderizing mallet until think and tender
2. Cut into roll-up sized (1 1/2″ roll)
3. layer meat, bacon, onion – in that order
4. Tie rolls with strong (loop for easy removal)
5. Place beef broth with pepper and Tabasco sauce to taste, in deep pan
6. Place Rouladen in boiling beef broth
7. Simmer 1 1/2 hours.
8. Remove Rouladen from beef broth
9. Bring to boil for 1 minute
10. Thicken broth with cornstarch ( 8 tablespoons cornstarch in two cups of water)
2. 11. Remove string from Rouladen, return to thickened beef broth, and keep warm until serving.
Makes 8-10 servings (30 Rouladen)
May freeze in 2-4 serving portions
Serve with mashed potatoes
Can add jalapenos too if you like.
Glazed Cornish Game Hen
This recipe is a little labor intensive but has a tasty payoff!
I will give you the basic recipe and then tell you how to make the rice and basting sauce.
Wild Rice Stuffing
2 Tbsp Butter Softened
Current Sance
Prepare Rice and Current sauce (see below)
Stuff the game hens and in the pan, rub their skin with butter and bake at 350 degrees for 30 minutes. After the 30 minutes
bake another hour and a half basting them with the Current sauce every 15 minutes.
Wild Rice
1 1/2 cups white rice
1 1/2 cups brown rice
4 Tbps butter divided
1 medium onion chopped
1 1/2 pounds mushrooms, sliced
1/4 cup chopped celery
1/2 cup chopped pecans
2 tbsp chopped fresh parsely
1/4 tsp Tyme
1/4 tsp Margarine
Salt and Pepper to taste
Combine and book rices and add 2 tbsp butter and fluff.
Saute onion, mushrooms, and celery in remaining butter and toss together.
Current Sauce
3. 1 tbsp butter
1 cup current jelly
2 tbsp lemon juice
1/4 cup cider vinegar
1 tbsp cornstarch
1 tsp salt
3 whole cloves
On stove top, melt butter, jelly and lemon juice. When melted add the remaining ingredients and cook until think.
Hopefully these will help you break the monotony of turkey, turkey and more turkey for Thanksgiving. These recipes are
great, tasty, use some delightful ingredients and reduce all the leftovers the fill your refrigerator after Turkey Day.
