One day I hope to compile a Caribbean Vegetarian Cookbook, highlighting some of our indigenous dishes, for eg, pepperpot using mushrooms...even creating some new dishes like dasheen-bush/spinach and carrot flat bread ( roti); tofu/sunflower/pumpkin and flax seed burger with a roasted tomato (choka for the trinis:)) and corn relish...
Also , there must be a chapter on raw foods using the eclectic varieties of fruits and vegetables we enjoy here in the Caribbean...
