The aim of this presentation is to show the nutritional situation of the population of countries participating in the World War I. The author wants to show the difficulties afflicting civilians during the conflict. The prolonged war has led to food shortage, restrictions on the distribution and hunger. In such situation, the attemptes were made to counteract the problem by using substitutes (surrogates, ersatz) . The main aim of the author is to present the most important substitute goods, which were brought into use during the war, methods of their production and deployment. They have become one of the symbols of war and had an impact on the course and ending of the conflict .]]>
