2. Ας μάθουμε γενικά για το Σουφλί...
■ Στο Σουφλί παράγεται μετάξι και παραδοσιακό κρασί από
αμπέλια που είναι αναρριχητικά φυτά.
■ Στην εποχή του χαλκού το αμπέλι και η οικογέννειά του
ήταν γνωστή και χρήσιμη στην Ελλάδα και στην Ευρώπη.
■ Στο Σουφλί χτίστηκε σιδηρόδρομος από τους Γάλλους και
χρησιμοποιείται ακόμα για μεταφορές.
■ Στο Σουφλί υπάρχει ένα μουσείο μεταξιού που πρέπει να
επισκεφθεί κανείς καθώς υπάρχει πλήθος πληροφοριών.
3. Ας μάθουμε για τα αμπέλια...
• Το αμπέλι είναι ένα αναρριχητικό φυτό που το ποσοστό της
καλλιέργειάς του είναι υψηλό στο Σουφλί και γενικά σε όλη την
Ελλάδα.
• Η θέση, το έδαφος, ο τρόπος καλλιέργειας του χωραφιού, η
απόσταση των κλημάτων του αμπελιού πρέπει να επιλεχθούν
προσεκτικά διότι χρειάζεται μία θέση που να δέχεται όλες τις
ενέργειες που χρειάζεται.
• Το αμπέλι αποτελείται απο την κορφή η οποία έχει μήκος 8-10 εκ.,
από τον κορμό, από τα άνθη, από τις ρίζες, η οποία αποτελείται
από την κύρια και τις δευτερεύουσες ρίζες, από καρπούς που
αλλιώς ονομάζονται ρόγες και από το κουκούτσι.

7. ΚΡΑΣΙ (ΟΙΝΟΣ)
• Στην επίσκεψή μας στο Σουφλί μάθαμε πολλά πράγματα. Ένα
από αυτά ήταν για το κρασί(οίνος). Ο κ. Μπέλλας, την
οινοπαραγωγική μονάδα του οποίου επισκεφθήκαμε, μας είπε
ότι υπάρχουν δύο είδη κρασιών: κόκκινο κρασί και λευκό
κρασί που γίνεται σε ζύμωση.
• Το τσίπουρο που γίνεται από το υπόλοιπο του κρασιού,
δηλαδή από κουκούτσια σε απόσταξη.
• Το έτοιμο κρασί αποθηκεύεται στις δεξαμενές και οι ατμοί
συγκεντρώνονται στην καμπάνα του εργοστασίου.
