There are different market forms for fish including live fish or whole round fish that are transported and caught alive, dressed fish that has had its scales, entrails, fins and head removed but is otherwise whole, butterfly fillets which are the two sides of the fish cut lengthwise and held together, fillets which are the boneless side of the fish cut from the backbone, steaks which are cross section slices cut from a large dressed fish including the backbone, and sticks which are uniform cuts made from blocks of frozen fillets.
