This document provides information on typical foods from different regions of Colombia. Some of the foods described include lechona (roasted pork), bandeja paisa (mixed meat and vegetables), ajiaco (potato and chicken soup), mazamorra (corn and milk drink), cocido boyacense (meat and vegetable stew), coconut rice, roasted fish, seafood casserole, mango ceviche, fish rolls, and snacks such as rosc坦n (bread with sugar), achiras (cheese balls), mogolla (bread), arepa (corn cakes), dulce cortado de leche (milk dessert), and empanadas (filled pastries). 3. Lechona
The lechona is
a roasted
pork with rise,
beans and
rice. It is very
common from
Tolima.
4. Bandeja Paisa
The Bandeja Paisa(from
Medell鱈n Antioquia) is
made up of meat,
avocado,
chicharron(Pigs skin),
rice, plantain, egg,
chorizo(Pigs meat)
and beans.
5. Ajiaco
The Ajiaco is made up of:
potato, corn, fried
chicken, avocado,rice ,
basil and capers.
Common in
Cundinamarca, where
Bogot叩 is.
6. Mazamorra
The mazamorra is
made up from: habas,
corn, potato, beans,
carrot and milk. It is
very common in
Boyac叩, a district near
Cundinamarca. It is
best considered as a
drink.
7. Cocido boyacense
The cocido boyacense
is a typical meal from
Boyac叩. Its ingredients
are: kubios, meat,
corn, ibias, pork and
small potatos.
8. Coconut rice
Coconut rice is a typical
food from Barranquilla,
Cartagena, Santamarta
and all of the caribbean
region. How to make
coconut rice?
With salt, 5 cups of water, a
pound of rice and a
regular size coconut.
9. Roasted Fish
Roasted fish is a typical
plate from the
caribbean coast. It is
made of: 2 eggs, Half
cup of water, a cup of
flour, a teaspoon of
salt, a teaspoon of oil
and half a kilogram of
fish steaks.
10. Seafood casserole
A casserole from the caribbean
coast that includes: 1 kilogram
of prawns, shrimp, squid and
fish fillet, one red onion, 2 sprigs
of onion, 2 bell peppers(red and
green), 1 stalk of celery, 6 sweet
peppers, 3 tablespoon of olive
oil, 6 cups of water, 2 large
coconuts, 8 peeled tomatoes
and a chopped cilantro to add
flavor.
11. Mango ceviche
Pacific region
Consists on green mangos
cutted into small pieces,
with ketchup, onions,
mustard, pepper and salt,
celery, 6 sweet peppers,
3 tablespoon of olive oil,
6 cups of water, 2 large
coconuts, 8 peeled
tomatoes and a chopped
cilantro to add flavour.
12. Fish rolls
Tiny pieces of fish that consist on
fish with cheese, mushrooms,
toast and
bacon. From the Pacific Region.
14. Rosc坦n
The roscon is a typical snack
from Colombia.
It is a circle made of bread
with sugar on
top of it. It usually has guava
paste or
"arequipe" .
Ingredients:
-Wheat flour -Butter
-Milk -Egg yolk
-Sugar -Yeast
15. Achiras
Achiras are a typical snack
from Colombia,
most sold in Huila and Cali.
Ingredients:
-Egg yolk -Melted butter
-Cheese -Achira starch
16. Mogolla
The mogolla also known as
"Scarleth" is
a typical bread produced in
Colombia. Usually
it's a semicircular shape.
Ingredients:
-Yeast -Wheat flour -Salt
-Hot water -Eggs -Dark
sugar -Butter
17. Arepa
The arepa is a snack typical
from Colombia and
Venezuela. There are a lot of
types in both countries but the
most important in Colombia
are: Arepa de chocolo, Arepa
de huevo, arepa de
queso, arepa boyacense, arepa
valluna and arepa
santandereana. There are a lot
of arepa flour
that is a special flour to make
arepas. Arepas
usually come wide with cheese
or egg (Depending
on the preparation) but there
are also some
flat arepas.
18. Dulce cortado de
leche
Consists on milk, sugar and
lemons, vanilla,
cinnamon. From the Pacific
Region.
19. Empanadas
A typical snack from all of
Colombia that consists on a layer
of corn filled with meat, chicken,
potato, etc. Usually eaten with
lemon. We often eat it in the
school.
