Egg yolks contain important carotenoids including canthaxanthin, capsanthin/capsorubin, citranaxanthin, apo-ester, and lutein/zeaxanthin. These carotenoids were listed in a 2013 internal document by F. Cisneros on carotenoids found in egg yolks.
