5. 1. Soak cherries in ¼ cup apple juice overnight.
2. Beat yoghurt and sugar till light and fluffy( this will take around 15 mins of good
beating)
3. Mix baking powder and baking soda with the yoghurt mixture and set aside for 3
mins.
4. Add the cocoa powder. Add ¼ cup apple juice( this is to mimic the effect of rum
in baking).
5. Add oil
6. Mix the above ingredients in the mixture till a light and fluffy mixture results
7. Add sieved flour and beat till you obtain a light and fluffy homogenous mixture
again( the key to soft and fluffy cakes is good beating. The more you beat, the
better.
8. Pour the cake batter into a foiled baking round container as shown in the
picture(Eggless cakes bake well in round containers).
6. 1. Preheat the oven at 200 degrees centigrade
2. Bake the cake batter at 200 degrees
centigrade for 10 mins
3. Bake at 180 degrees for 30-35 minutes or till a
toothpick inserted in the middle of the cake
comes out clean.
7. Slice the cake into two as shown with a sharp
knife to apply frosting
8. This is the cake frosting. Mix the cornflour, butter, vanilla
essence and powdered sugar to obtain this vanilla frosting
which you can apply on the cake.
Along with this, prepare a mixture of cherries soaked in
apple juice, separately.
9. •Frosting the cake is a real simple job !
•All you have to do is to spread the icing that you prepared on the
bottom and top slices of the cake to form the middle layer of
icing.
•After spreading the icing mixture generously on the bottom layer,
spread the cherry mixture on it.
•Put the top layer of cake on the frosted bottom layer.
You have made the bottom layer.
10. Frosting the top layer is easy !
•Spread the frosting generously on the top layer and
the sides of the cake.
•Sprinkle choco-chips on the top( Ideally you
should be using chocolate shavings).
•Place the cherries on the cake
•Refrigerate the cake before serving
