This document evaluates the antimicrobial properties of monoacylglycerols (MAG) and nisin. It describes preparing MAG from lauric acid, palmitic acid, and adamantanecarboxylic acid. Methods include testing the MAG and nisin individually and combined against various gram-positive and gram-negative bacteria using growth curve analysis. Some results showed MAG inhibiting Bacillus subtilis by 41%. Problems included equipment issues. The conclusion suggests a synergistic effect between nisin and MAG, and that combining them could replace part of the nisin to reduce costs.
