This might be a little basic, but I want to go over the history of email.
When you want to send a letter or a package, you have multiple options. You give your letter to one of the following providers to deliver it.
Email works the same way. You have a lot of providers that can delivery your email, from your internet provider, to an exchange server in your office, to yahoo or google.
The snail mail provider has a couple of option to get you your package, they can use Trains, Plains, and Automobiles.
In the Electronic World, we also have a couple of different delivery methods to use.

You have a Mailbox.
Can have the following types of Mailboxes:

Mac Mail
Gmail
Thunderbird
Smartphone Email Client
Exchange became the gold standard for email. To use it, you needed an exchange server
You would buy an exchange server and set it up at your office. All of your workstations, and smartphones would connect to it.
While you got the benefit of exchange there were 5 big issues
Blacklists
If only one computer in your office got a virus, it could shutdown email for everyone.
You lose Power or Internet, you lose email.
If the server crashes, you lose email.
You need to have an IT Person you keep the email running.

Besides all the problems with hosting your own server, there were a couple of other factors that forced Microsoft to move to the cloud.
Started in 2004, really good free email service. It also became socially acceptable to use Gmail for business purposes.
Large companies began building server farms and hosting Microsoft Exchange for you. This cost about $10 an email address a month.
These companies were buying exchange from Microsoft, buying the hardware to run it, and then reselling it.
Launched in 2011. It was originally called BPOS. Microsoft finally woke up.
Microsoft was able to undercut everyone since they owned the software and the hardware.
This is Microsoft so they are 100 different plans and its really complicated. Just worry about these three:
