雞蛋 5 顆
低筋麵粉 120g
玉米粉 30g
細砂糖 45g
黑糖 45g
水 45c.c
葡萄乾適量
沙拉油 2 大匙
作法
1
將所有材料量秤好，低粉+玉米粉(也可全用低粉)過篩，蛋白跟蛋黃分開，黑糖+水融化至
無顆粒。

將蛋白打到稍微起泡後分3 次加入細砂糖。

加入第3 次砂糖後打至蛋白完全起泡(乾發)再依序慢慢加入蛋黃與黑糖水打勻。

將篩好的粉加入蛋糊中，輕拌均勻。此時記得預熱蒸籠。

加入沙拉油輕輕拌好麵糊。

放入適量的葡萄乾(沒有也可以省略)，以大火蒸15~20 分鐘即完成。

黑糖+水後隔水加熱將黑糖溶解完畢再放涼備用。
