This study aimed to compare the protein profiles of pasteurized cow, goat, and soy milk through quantitative analysis. SDS-PAGE gel electrophoresis and the Bradford assay were used to analyze and compare the number and concentration of proteins in each milk. The SDS-PAGE revealed that cow and goat milks had identical protein profiles and contained more proteins than soy milk. The Bradford assay found that all three milks had similar protein concentrations between 0-4 mg/mL. This suggests that soy milk can provide comparable nutrition to cow and goat milks. Future studies could expand this analysis to other milk types to increase consumer awareness of protein content.
