Shoppers often think that the most colorful food is the freshest. Fresh meat, for instance,
has bright red color. When it is not very fresh, meat begins to lose its color. However, if the
shopkeeper uses light which is mainly red, the meat looks fresh again. Vegetables like lettuce
and celery are bright green because they have chlorophyll. When these vegetables are not
fresh, they lose their chlorophyll and they become pale. If the shopkeeper uses light which
has many green wave-lengths, the lettuce and celery look fresh once more. Colored lights
make the food look better but they do not help its taste or quality.
