1. Acts as a C&G employee
By
 Abiding by the "C&G Employee Rules and Regulations"
 Adopting the "C&G Employee Behaviors"
2. Oversees all phases of outlet operations
By
 Checking regularly on the opening & closing procedures in the front
and heart of the house and in the delivery department
 Controlling employees grooming
 Supervising the service operations on the floor especially during rush
hours
 Striving for consistent excellent food and service quality for the
coffeehouse & delivery
 Supporting the workflow as need be by handling all types of
operational tasks
 Continuously inspecting the premises and following-up on corrections
 Following-up on customers satisfaction; handling complaints and
fixing problems when needed
3. Administers the operations
By
 Controlling the service schedules and the staff rotation prepared by the
Restaurant Supervisors & Team Leaders
 Checking on employees absence, following on rules & regulations,
punching in & out, etc.
 Regularly controlling checklists and inventories accomplished by
responsible employees
 Detecting conflicts and/or processes dysfunctions
 Analyzing results and diffusing corrective measures to be undertaken
 Opening and closing daily accounts as well as tips calculations
4. Ensures the best performance of the employees
By
 Promoting an atmosphere of teamwork
 Inspiring, training, and developing peoples skills
 Building moral and spirit to positively affect the service attitude
 Motivating employees and dealing with them on a one on one basis

 Tracking daily sales in terms of:
o Total sales and total sales per waiter
o Average check and average check per waiter
o Menu categories sales and periods of sales during the day
o Menu items sales (top items and non-selling items)
 Tracking on monthly sales in terms of:
o Top and worst selling days/weeks
o Rush hours in sales
o Impact of special events
 Organizing selling competitions in order to fill probable gaps in sales
and service (focusing on most profitable items, peak times, etc.)
 Coordinating to deliver occasional sales training with the Training
Coordinator
 Motivating employees to increase sales of non-selling items
7. Controls and decreases cost
By
 Periodically analyzing the P&L and detecting cost gaps in food and
beverages, payroll, and other expenses
 Analyzing the operations procedures and detecting dysfunctions leading
to high cost
 Setting regulations to control/cut cost where needed (purchasing,
preparations, cooking, etc.)
 Evaluating the impact of the undertaken actions on the profitability of
the operations
8. Guarantees smooth coordination
By
 Answering on the restaurant Logbook covering all aspects of
operations and guest comments
 Meeting weekly with the Owners and/or Director of Operations as
much as with the HR Coordinator or other administrative officers for
continuous follow-up on operational issues
 Setting regular meetings with the Head Chef, Restaurant Supervisors
and Team Leaders
 Meeting regularly with staff at all levels

Increases sales By Tracking daily sales in terms of: o Total sales and total sales per waiter o Average check and average check per waiter o Menu categories sales and periods of sales during the day o Menu items sales (top items and non-selling items) Tracking on monthly sales in terms of: o Top and worst selling days/weeks o Rush hours in sales o Impact of special events Organizing selling competitions in order to fill probable gaps in sales and service (focusing on most profitable items, peak times, etc.) Coordinating to deliver occasional sales training with the Training Coordinator Motivating employees to increase sales of non-selling items 7. Controls and decreases cost By Periodically analyzing the P&L and detecting cost gaps in food and beverages, payroll, and other expenses Analyzing the operations procedures and detecting dysfunctions leading to high cost Setting regulations to control/cut cost where needed (purchasing, preparations, cooking, etc.) Evaluating the impact of the undertaken actions on the profitability of the operations 8.
