CARROT CAKE
INGREDIENTS:
To prepare the sponge cake:
- 280 g of flour
- 350 g of carrots
- 4 medium eggs
- 300 g of brown sugar
- 250 g of butter
- 1 teaspoon of cinnamon powder
- 1 teaspoon of vanilla extract
- 1 teaspoon of ginger powder
- 1 teaspoon of nutmeg
- 4 crushed cloves
- 1 teaspoon of bicarbonate of soda
- 2 teaspoons of powdered leavening
- a pinch of salt
To prepare the topping:
- 300 g of Mascarpone cream cheese
- 300 ml of whipped cream
- 250 g of powdered sugar
- 50 g of butter
- 1/2 teaspoon of vanilla extract
PREPARATION:
1- We will start by warming up the oven to 160属. To avoid that the cake sticks,
we are going to cover the base of the cake pan with waxed paper.
2- We will start by making the sponge cake. We clean the carrots, dry them and
cut them until they are tiny slices.
3- We put in a big bowl the flour, the bicarbonate of soda, the powdered
leavening, the cinnamon, cloves, nutmeg and ginger.
4- Then, we put the brown sugar and the eggs in other bowl, and we whip until
it makes foam. We mix both bowls adding the carrots and butter, which we
have previously melted in the microwave. Then, we mix until there is an
homogeneous dough.
5- We put the dough in the cake pan, and it goes in the baking sheet that is in
the middle of the oven in 180尊 C. The dough will stay there for 60-70
minutes. When its in the oven for 30 minutes, we will put an aluminium foil
to avoid burning the sponge cake. The last 5-8 minutes, we take the
aluminium foil off.
6- When the time is up, we take out the sponge cake and we let it cool in the
cake pan for 10 minutes. Then, we put the sponge cake into a plate, and we
let it cool on an oven rack.
7- Lets prepare the topping. We mix the butter, the Mascarpone creme cheese
and the vanilla extract, and when its mixed up, we add the sugar. Then, we
add the whipped cream and mix again.
8- We cut the sponge cake in two or three bases. With the topping we just
made, we fill up each base, so the sponge cake is stuffed with the
Mascarpone creme topping.
9- We put just a little bit of topping on the sponge cake. Then, we let the cake
in the fridge for about an hour, and we will put a thicker layer of topping on
it.
10-The carrot cake is done! To decorate it you can put your favourite nuts on it.
