Step One: Choose Your Tea


 Choose whatever tea appeals to you, locally you
 can get loose leaf tea at Teavana and Dobra Tea,
some grocery stores are also starting to carry them
    (City Market, Healthy Living and Natural
             Provisions all have them)
Step Two: Prepare the Tea

 To start, put about one and a half tablespoons of
     leaves into the infuser if you are using a
teapot, and about one tablespoon for an individual
                        mug.

Make sure you have your teapot next to the stove
  so you can pour it once your water is ready.
Step Three: Boil Water
 Every tea requires a different water temperature, and infusion
time so read the instructions that came with the tea you chose.


   Fill your kettle and place it on the stove over high
        heat. The sound of the water will begin to
 change, once that happens open the kettle and place
  the thermometer in it, making sure it doesnt touch
  the bottom. Keep an eye on the temperature until it
gets to where you need it, then remove the kettle from
                        the stove.
Step Four: Infuse the Tea


Once your water is up to temperature pour it over
 the leaves into the teapot or mug. Then set your
 timer for however long your tea needs to infuse.
  Do not over steep the tea, it will become bitter.
Step Five: Final Touches


   When the timer goes off, remove the
infuser and set aside (either on a paper towel, or
                in an infuser holder)


          Pour the tea, and enjoy!
Other Options

If you want to make another cup you can either a)
 pour the rest of the water from the kettle into an
    extra pot to hold the water (they make pots
specifically for this) then place it on top of a teapot
  warmer, or you can follow the directions again,
 using the same leaves as before. Most leaves can
                 handle 3-6 infusions.
