With a background in projects spanning more than 40 years, Tim Lyons specialised in the delivery of large, complex, multi-disciplinary programmes for clients including Crossrail, Network Rail, ExxonMobil, Siemens and in patent development. LES VERGESLES VERGES Ingredients 3 eggs 125 ml milk 125 ml water 500g potato/or sweet potato 500g flour 30 g yeast bread A pinch of salt A spoonful of butter Olive oil for frying and plenty of sugar for sprinkling. Mix the ingredients until you obtain a homogeneous dough. Let it rest for approximately one hour. Heat the oil and then squeeze the dough with your hand releasing some small portions by the upper side. Pinch the small portion with both your index and thumb fingers and make a hole in the middle at the same time. Let them cool down and eat them with sugar or honey.
